Today, I'm sharing 5 things that I've been doing, thinking about, etc, etc.
1. GETTING A KICK OUT OF: Anonymous Cooking Shows
My fav right now is Imamu Room - brings me joy and a sense of chill calm. And I sometimes get lunch ideas watching her make bento boxes for her "Husbento". Get it? So cute!
2. SO PROUD OF: My Twin Brother!
My twin is thisclose to becoming a StarSeller on Etsy! Please check out his shop: BrooklynTaylorTech! He has an incredible collection of Hot Wheels! THE perfect gifts for the car aficionado in your life!
3. READING: Thought-Provoking Books
Feeding the Soul (Because it's My Business): Finding Our Way to Joy, Love & Freedom by Tabitha Brown
Tab is my friend in my head! I do not want to finish this book. Includes tasty vegan recipes at the end of each chapter!
Vegan at Times by Jessica Seinfeld
This is a straight-up cookbook that takes a very approachable view on veganism. She had me at, "...at times". Shout out to my sister for gifting me this cookbook!
How Not to Diet by Michael Greger, MD
About 30% through and learning lots about the science and history of diets. My hope is that I'll get some applicable ideas for my life.
The companion cookbook is on my wishlist! I also started reading his other book How Not to Die (confusing!) but this one resonated with me more.
Feel Great Lose Weight by Rangan Chatterjee, MD
Fav quote from this book: "Not everything has to be overwhelmingly delicious". 🤯 The quote that I never knew, I always needed to hear!
Not every meal needs to knock my socks off or be photo-worthy. Is it filling? Nutritious? Yummy? Any of the above? Then I'm doing alright.
Honorable Mention: Damn Delicious Meal Prep by Chungah Rhee. I own this cookbook and love the photos and recipes. It is a bit too chicken recipe-heavy for me though. But it might just be the meal prep inspiration you're looking for!
4. IN SEARCH OF: High Satiety Snacks & Meals
Thanks in part to this ⬆️⬆️ 30 Day Challenge that I started with my gang-gang back in December, I am eating healthier. True to form, I made it a 100 Day Challenge.
Buuuut, sometimes I'm so hungry. Looking back, this was probably an issue before the challenge.
SOS! Any tips and/or recipes are greatly appreciated.
PS. I love the way the word, "satiety" sounds!
PPS. My sister got this 30 Day Challenge off of social media a few years ago. Not sure who originally posted it or how qualified they were to do so. That being said, if this challenge "don't apply, let it fly". Consider creating your own that might serve your dietary needs better. 😍
5. WATCHING: Michael Twitty's MasterClass
Michael Twitty Teaches Tracing Your Roots Through Food
I looooove this MasterClass, for the first time, it made me think about my food history.
Which recipes...
- have defined my life?
- are me on a plate?
- will I leave behind when I become an ancestor?
If you never watch another MasterClass watch Michael W. Twitty's. I also bought his book entitled, The Cooking Gene!
EATING: Overnight Oats!
Yep, that's a pic of my breaky! ⬇️⬇️
Kayla Chandler and The Cooking Foodie inspired me with their take on overnight oats. For vegan options, look no further than Plant Based on a Budget.
My fav ingredients/toppings:
Ambrosia apples (roughly chopped),
Hu dark chocolate gems,
shredded coconut, (somehow never get around to toasting)
frozen berries/mangoes,
almonds/sunflower seeds, and *rolled oats.
Caveat: Speaking from experience, it's shockingly easy to turn this into a high-calorie dessert-type breakfast. If you care about that be careful with your toppings. Also, if you're feeling frisky, how about savory oats?!
*Years ago, I made my overnight oats with steel-cut oats. I find that I prefer rolled oats but both work.
